  • 1 cup shredded carrots
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds

Instructions

  1. Shred the cucumber and carrots using a grater or mandoline. Place them in a large bowl.
  2. Add chickpeas, red onion, and cilantro to the bowl with the vegetables.
  3. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, ginger, and garlic until well combined.
  4. Pour the dressing over the slaw mixture and toss gently to coat all ingredients evenly.
  5. Garnish with sesame seeds on top.
  6. Let the slaw sit for at least 10 minutes before serving to allow flavors to meld.
