Ingredients

Scale
  • 2 (0.25-ounce) packages active dry yeast
  • ½ cup plus 1 teaspoon sugar
  • 1 ¾ cups warm water
  • 5 cups all-purpose flour
  • 2 teaspoons kosher salt
  • 1 tablespoon vegetable oil
  • 9 cups water
  • ½ cup baking soda
  • Coarse salt for topping
  • ¼ cup melted butter for topping

Instructions

  1. Activate the yeast by combining it with warm water and sugar. Let it foam for about 10 minutes.
  2. In a stand mixer, combine flour, remaining sugar, and kosher salt. Add the yeast mixture and vegetable oil; mix until smooth.
  3. Transfer the dough to a greased bowl and let it rise until doubled (about 1 hour). Preheat the oven to 425°F.
  4. Boil water mixed with baking soda in a pot. Divide the dough into pieces, roll into ropes, and shape into pretzels.
  5. Boil each pretzel for 20-30 seconds and place them on parchment-lined baking sheets. Sprinkle with coarse salt.
  6. Bake for 8-10 minutes until golden brown; brush with melted butter before serving.
