  • 1/2 lb chicken breast (sliced)
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 tbsp apple vinegar
  • 1 tbsp light soy sauce
  • 1/2 tbsp cornstarch
  • 1/2 tbsp avocado oil
  • 1 medium carrot (sliced)
  • 3 cups cabbage (thinly sliced)
  • 1/4 white onion (sliced)
  • 5 scallions (chopped)
  • 1 tbsp ginger (minced)
  • 5 cloves garlic (minced)
  • 2 tbsp light soy sauce
  • 1/2 lb lo mein noodles (fresh)
  • 3 tbsp neutral oil
  • 1/2 tsp sesame oil
  • 1 tbsp water
  • 1/2 tbsp sugar

Instructions

  1. Marinate sliced chicken in salt, white pepper, light soy sauce, apple vinegar, cornstarch, and avocado oil for 15–20 minutes.
  2. Prepare vegetables: carrots, cabbage, onion, scallions (whites and greens separated), garlic, and ginger.
  3. Mix stir-fry sauce from light soy sauce, apple vinegar, sesame oil, sugar, water, and cornstarch.
  4. Cook lo mein noodles until al dente; drain and coat with sesame oil.
  5. Heat neutral oil in a wok; sauté marinated chicken until cooked through.
  6. Stir-fry garlic and ginger; add scallion whites and vegetables until tender.
  7. Combine noodles and chicken with stir-fry sauce; mix well and serve garnished with scallion greens.
