- 1 lb Rotini Pasta
- 4 cups fresh spinach
- 3 large avocados
- 1 1/2 cups cherry tomatoes
- 2 large ears of corn
- 2 – 3 cloves fresh garlic
- 1/4 cup lemon juice
- 1 teaspoon kosher salt
- 1/4 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 2 tablespoons fresh parsley, minced
Instructions
- Cook the rotini pasta in boiling water for 7-10 minutes until al dente. Drain and rinse under cold water.
- In a food processor, combine 2 avocados, half the spinach, lemon juice, garlic, onion powder, oregano, and salt; blend until smooth. Add remaining spinach and lemon juice; blend until creamy.
- Toss the cooked pasta with halved tomatoes and corn in a mixing bowl.
- Pour the avocado dressing over the pasta mixture; toss gently to combine.
- Fold in diced avocado and minced parsley before serving.
