Ingredients

  • 200g block of feta cheese
  • 3 tbsp olive oil
  • 300g baby plum or cherry tomatoes (halved)
  • 200g asparagus (trimmed and chopped)
  • 400g uncooked orzo
  • 100g baby spinach (roughly diced)
  • Fresh basil and chives for garnish
  • Mascarpone for creaminess
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 200C/390F.
  2. Place the feta in a large oven-safe pan, drizzle with 1 tbsp olive oil, and bake for 8 minutes until soft.
  3. Add the asparagus and tomatoes around the feta, drizzle with another 2 tbsp olive oil, sprinkle with pepper, then bake for another 12-15 minutes until golden.
  4. Meanwhile, cook the orzo in salted boiling water until al dente; drain while reserving some starchy water.
  5. Mash the baked feta until smooth and mix it with the drained orzo. Stir in spinach and a splash of reserved water until creamy.
  6. Fold in basil, chives, mascarpone, adjusting seasoning as needed. Serve warm.
