- 1 medium head of cauliflower
- 1 red bell pepper
- 1 medium yellow onion
- 2 tablespoons extra-virgin olive oil

- 8 ounces ziti pasta
- 4 cups marinara sauce
- 1/4 cup chopped fresh basil
- 8 ounces grated part-skim mozzarella cheese
- 2 cups cottage cheese or ricotta cheese
Instructions

- Roast the vegetables: Toss cauliflower, bell peppers, and onion with olive oil and salt; spread on baking sheets and roast for 30-35 minutes until tender.
