  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 cup whole milk
  • 1 ¾ cups fresh or frozen strawberries (chopped)
  • Turbinado sugar for topping

Instructions

  1. Preheat oven to 375°F and line a muffin pan with tulip liners.
  2. In one bowl, combine flour, baking powder, and salt; set aside.
  3. In another bowl, cream softened butter and sugar until fluffy.
  4. Add eggs and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually alternate adding the dry ingredients and milk to the wet mixture until just combined.
  6. Fold in chopped strawberries, reserving some for topping.
  7. Scoop the batter into muffin liners, top with reserved strawberries and sprinkle with turbinado sugar.
  8. Bake for 25–35 minutes or until golden brown; check doneness with a toothpick.
  9. Cool in the pan for about 30 minutes before transferring to a wire rack.
