  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces grape tomatoes (halved)
  • 2 tablespoons avocado oil or other high-heat oil

  • Kosher salt and fresh black pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard; season with salt and pepper.
  3. In another bowl, mix grape tomatoes and basil; season with salt and pepper.
  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear until golden brown on both sides.
  5. Pour balsamic sauce over chicken; stir to combine.
  6. Top chicken with tomato mixture; bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F.
  7. Let rest for 5 minutes before serving.
