  • 4 ounces white cheddar cheese
  • 8 ounces softened cream cheese
  • 1/2 cup full-fat sour cream
  • 1/2 cup ranch dressing
  • 1 cup finely chopped dill pickles (divided)
  • 1 can (14.5 ounces) white beans
  • 1/4 teaspoon garlic powder
  • 2 tablespoons minced fresh dill (plus more for topping)
  • 2 tablespoons pickle brine

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded mozzarella and cheddar cheeses; set aside.
  3. In another bowl, use a fork to mash together softened cream cheese, sour cream, garlic powder, and ranch dressing until well blended.
  4. Mix in 3/4 cup chopped pickles, white beans, half of the cheese blend, minced dill, and pickle brine until thoroughly combined.
  5. Transfer the mixture into a baking dish; top with remaining cheese and chopped pickles.
  6. Bake for 21-23 minutes or until bubbly; broil for an additional 2-3 minutes until golden brown.
