  • 1 large sweet potato (about 4 cups diced)
  • 1 cup wild rice
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • 3 tablespoons Dijon mustard
  • ¼ cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic (minced)
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon kosher salt
  • 4 cups thinly shredded red cabbage
  • 4 cups thinly sliced lacinato kale (ribs removed)
  • ½ cup cilantro (chopped)
  • ½ cup chopped smoked almonds

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced sweet potatoes with olive oil and salt; spread on a baking sheet. Roast for about 25 minutes until tender.
  3. Rinse wild rice, then combine with low-sodium chicken broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 45 minutes.
  4. Mix spices and rub onto chicken breasts. Heat olive oil in a skillet over medium-high heat and cook chicken for about 5-7 minutes per side until cooked through.
  5. Assemble bowls by layering wild rice at the base, topped with roasted sweet potatoes, sliced chicken, shredded cabbage, kale, cilantro, and smoked almonds.
