  • 20 soft flour tortilla taco shells
  • 3 cups cooked skinless and boneless shredded chicken breast
  • 1 yellow bell pepper (diced)
  • ½ cup sweet yellow onion (finely diced)
  • ½ cup red onion (finely diced)
  • ½ cup salsa
  • 1 cup taco sauce
  • 4 cups finely shredded Colby and Monterey jack cheese
  • 2 cups finely shredded cheddar cheese
  • Fresh cilantro (optional garnish)

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. Cut each tortilla in half and cover with a cloth to keep warm.
  3. In a mixing bowl, combine chicken, bell pepper, yellow onion, red onion, salsa, and taco sauce.
  4. Spoon filling onto one side of each halved tortilla, top with cheese, roll into cones, and place around a jar to form a ring.
