  • 810 Flour Tortillas
  • 1 lb Beef Sausage
  • 7 Large Eggs
  • 2 Cups Shredded Cheddar Cheese
  • 2 Cups Heavy Cream or Whole Milk
  • ½ Tablespoon Canola oil
  • 1 Tablespoon Unsalted Butter
  • ¼ Cup Green Pepper, diced
  • ¼ Cup Yellow Onion, diced
  • ¼ Cup Red Pepper, diced
  • Kosher salt and black pepper to taste
  • Chili powder as needed
  • 1½2 Tablespoons All-Purpose Flour

Instructions

  1. Cook the beef sausage in a large skillet over medium heat until browned.
  2. Add flour to the pan and cook briefly before gradually stirring in cream or milk until thickened. Season with salt and pepper.
  3. In another skillet, sauté onions and peppers in butter, then add beaten eggs and cook until set. Stir in some cheese.
  4. Fill each tortilla with the egg mixture and roll tightly before placing them seam-side down in a greased baking dish.
  5. Top with remaining cheese and bake at 350°F until bubbly.
  6. Drizzle with sausage gravy before serving.
