  • 1 3/4 cups (375 grams) light or dark brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 1/2 teaspoons vanilla extract
  • 2 1/2 cups (350 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon fine sea salt

Instructions

  1. In a small saucepan, melt ½ cup of butter over medium heat until it turns amber and has a nutty aroma. Transfer to a bowl to cool for about five minutes.
  2. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  3. In a large bowl, blend the cooled brown butter, remaining butter, and brown sugar using an electric mixer until creamy. Add the egg, egg yolk, and vanilla extract; mix well.
  4. Gradually add the flour, baking soda, and salt until just combined. Chill the dough in the refrigerator for at least 30 minutes.
  5. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart. Bake for about 10 minutes until edges are golden but centers remain soft.
  6. Allow cookies to cool on the baking sheet for several minutes before transferring them to a wire rack.
