  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 12 oz pasta of choice (such as penne or spaghetti)
  • 1/2 cup grated Parmesan cheese
  • Optional: fresh mozzarella pearls for topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with olive oil, salt, pepper, and Italian seasoning. Sear in a skillet for 3-5 minutes on each side until golden brown.
  3. Transfer the skillet to the oven and bake for 15-20 minutes until fully cooked.
  4. In a mixing bowl, combine halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, and pepper.
  5. Cook pasta according to package instructions until al dente; drain.
  6. Slice the baked chicken after resting for a few minutes.
  7. Toss cooked pasta with half the bruschetta mixture and half of the grated Parmesan cheese.
  8. Plate pasta topped with sliced chicken and remaining bruschetta mixture.
