Description

Bruschetta Pasta Salad is a vibrant and refreshing dish that beautifully combines the classic flavors of bruschetta with hearty pasta. This easy-to-make salad features ripe tomatoes, fresh basil, and aromatic garlic, making it an ideal option for summer picnics, barbecues, or light dinners.


Ingredients

  • 500g spaghetti pasta (or pasta of choice)
  • 4 vine-ripened tomatoes, diced
  • 1/2 small red onion, diced
  • 2 tbsp fresh basil, chopped (plus more for garnish)
  • 1 clove garlic, minced
  • 1/2 tsp oregano
  • 5 tbsp extra-virgin olive oil (divided)
  • 3 tbsp balsamic vinegar glaze (for drizzling)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente.
  2. While the pasta cooks, combine diced tomatoes, red onion, fresh basil, minced garlic, oregano, salt, pepper, and 3 tbsp of olive oil in a medium bowl. Stir well and let marinate for 10 to 15 minutes.
  3. Drain the cooked pasta and drizzle with the remaining 2 tbsp of olive oil in a large heatproof serving bowl or skillet.
  4. Toss the marinated bruschetta mixture with the warm pasta until well combined. Adjust seasoning if necessary.
  5. Drizzle with balsamic glaze and garnish with extra basil before serving.
