- 500g spaghetti pasta (or pasta of choice)
- 4 vine-ripened tomatoes, diced
- 1/2 small red onion, diced
- 2 tbsp fresh basil, chopped (plus more for garnish)
- 1 clove garlic, minced
- 1/2 tsp oregano
- 5 tbsp extra-virgin olive oil (divided)
- 3 tbsp balsamic vinegar glaze (for drizzling)
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente.
- While the pasta cooks, combine diced tomatoes, red onion, fresh basil, minced garlic, oregano, salt, pepper, and 3 tbsp of olive oil in a medium bowl. Stir well and let marinate for 10 to 15 minutes.
- Drain the cooked pasta and drizzle with the remaining 2 tbsp of olive oil in a large heatproof serving bowl or skillet.
- Toss the marinated bruschetta mixture with the warm pasta until well combined. Adjust seasoning if necessary.
- Drizzle with balsamic glaze and garnish with extra basil before serving.
