  • 1 large boneless skinless chicken breast (1 lb)
  • ½ cup blue cheese dressing (or ranch)
  • 2 tablespoons butter
  • ½ cup yellow onion (diced)
  • 1 stick celery (diced)
  • 3 cloves garlic (minced)
  • 14.5 oz diced tomatoes (undrained)
  • 4 cups chicken broth
  • ½ cup buffalo sauce
  • 8 oz cream cheese (softened and cubed)
  • 1.5 cups cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. Melt 1 tablespoon of butter in a skillet over medium heat. Cook the chicken breast until fully cooked through, about 6-7 minutes per side. Shred the chicken.
  2. In the same skillet, add another tablespoon of butter and sauté diced onion, celery, and minced garlic until softened (3-4 minutes).
  3. Stir in undrained diced tomatoes and chicken broth; bring to a boil before adding penne pasta. Reduce heat to low, cover, and simmer until pasta is tender (10-12 minutes).
  4. Add buffalo sauce along with cream cheese, cheddar cheese, and mozzarella cheese; mix until melted and creamy.
