  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 3 cups chopped cabbage
  • 1 can (14 ounces) tomato sauce
  • 1 can (28 ounces) fire-roasted diced tomatoes (with juices)
  • 4 cups beef broth
  • 1 cup water
  • 2/3 cup uncooked white rice
  • 1 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot over medium-high heat, brown the ground beef with chopped onions for about 8 minutes. Spoon out any excess fat.
  2. Stir in minced garlic, then add chopped cabbage, tomato sauce, diced tomatoes, beef broth, water, paprika, Italian seasoning, and rice. Mix well.
  3. Bring to a boil over high heat. Once boiling, reduce heat and let it simmer for 15-20 minutes until the rice is cooked through, stirring occasionally.
  4. Season with salt and pepper to taste before serving hot.
