  • 2 tablespoons Cajun seasoning
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1 cup broccoli florets
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet.
