  • 12 oz chow mein egg noodles
  • 1/2 small yellow onion
  • 5 stalks green onions
  • 2 cups bean sprouts
  • 3 tablespoons corn oil
  • 1 teaspoon sesame oil
  • 2 tablespoons dark soy sauce
  • 1 tablespoon regular soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon granulated sugar
  • 1 tablespoon water

Instructions

  1. Soak chow mein noodles in boiling water for 30 seconds to 1 minute until softened. Drain and set aside.
  2. In a bowl, mix dark soy sauce, regular soy sauce, hoisin sauce, sugar, and water until dissolved.
  3. Heat 1 tablespoon corn oil in a wok over medium-high heat. Sauté sliced onion and white parts of green onions for 1 minute; set aside.
  4. In the same wok, heat another tablespoon of corn oil and pan-fry the noodles for about 4 minutes until crispy, flipping halfway through.
  5. Add sautéed onions, bean sprouts, both green parts of green onions, and prepared sauce to the noodles. Mix gently for another minute.
  6. Remove from heat, drizzle with sesame oil, toss to combine, and serve immediately.
