- 4 pounds chicken wingettes/drumettes
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup pineapple preserves
- 1/3 cup distilled white vinegar
- 1/4 cup water
- 2 tablespoons barbecue sauce
- 2 tablespoons molasses
- 2 teaspoons jerk seasoning
- 2 teaspoons soy sauce
- 2 teaspoons grated ginger
- 1 teaspoon Sriracha hot sauce
Instructions
- Preheat oven to 450°F. Line two baking sheets with foil and coat with nonstick spray.
- Toss chicken wings with kosher salt and black pepper, then spread in a single layer on the baking sheets.
- Bake for 15 minutes.
- In a medium pot, combine glaze ingredients and bring to a boil; then reduce heat and simmer until thickened (about 10 minutes).
- Reserve some glaze for basting, then baste wings after the first bake.
- Return wings to oven for another 10 minutes, baste again with reserved glaze, and bake until internal temperature reaches at least 170°F (about another 10 minutes).
