  • 4 pounds chicken wingettes/drumettes
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pineapple preserves
  • 1/3 cup distilled white vinegar
  • 1/4 cup water
  • 2 tablespoons barbecue sauce
  • 2 tablespoons molasses
  • 2 teaspoons jerk seasoning
  • 2 teaspoons soy sauce
  • 2 teaspoons grated ginger
  • 1 teaspoon Sriracha hot sauce

Instructions

  1. Preheat oven to 450°F. Line two baking sheets with foil and coat with nonstick spray.
  2. Toss chicken wings with kosher salt and black pepper, then spread in a single layer on the baking sheets.
  3. Bake for 15 minutes.
  4. In a medium pot, combine glaze ingredients and bring to a boil; then reduce heat and simmer until thickened (about 10 minutes).
  5. Reserve some glaze for basting, then baste wings after the first bake.
  6. Return wings to oven for another 10 minutes, baste again with reserved glaze, and bake until internal temperature reaches at least 170°F (about another 10 minutes).
