  • 7 9-inch tortilla shells
  • 1 cup graham cracker crumbs
  • 1 1/2 tablespoons granulated sugar
  • 1/3 cup butter (melted)
  • 8 ounces cream cheese (room temperature)
  • 3 tablespoons cheesecake instant pudding mix
  • 1 cup heavy whipping cream (divided)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped strawberries
  • 3/4 cup strawberry glaze

Instructions

  1. Preheat oven to 350°F (175°C) and mix graham cracker crumbs with sugar. Stir in melted butter until sandy.
  2. Press mixture into tortilla shells on a baking sheet and bake for about 10 minutes until golden brown. Cool completely.
  3. Beat cream cheese with powdered sugar until smooth; mix in pudding mix and vanilla extract.
  4. Whip half of the heavy cream to stiff peaks and fold into the cream cheese mixture.
  5. Fill cooled taco shells with cheesecake filling, top with chopped strawberries and drizzle with glaze. Chill for at least one hour before serving.
