  • 1 tbsp butter
  • ½ medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups broccoli florets (fresh or thawed frozen)
  • ½ tsp Italian seasoning
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked (shredded chicken)
  • 2 cups shredded cheddar cheese (preferably sharp)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil and butter in a skillet over medium heat. Sauté chopped onion for 3–4 minutes until translucent.
  2. Add broccoli florets; cook for an additional 2 minutes until slightly softened.
  3. Mix in minced garlic, Italian seasoning, and orzo pasta; toast for 30 seconds.
  4. Pour in chicken broth and heavy cream; bring to a boil, then reduce heat to simmer.
  5. Cook uncovered for about 10 minutes until orzo is tender and liquid is absorbed.
  6. Stir in shredded chicken; heat through for 2–3 minutes.
  7. Remove from heat and mix in shredded cheddar cheese until melted.
  8. Season with salt and pepper; let sit for 2–3 minutes before serving.
