  • 1.5 teaspoons Italian seasoning
  • Salt/Pepper
  • 3 Tablespoons butter (divided)
  • ¾ cup onions (diced)
  • 1 Tablespoon garlic (minced)
  • 2 ½ cups beef broth
  • 1 ¼ cups uncooked white long grain rice (not instant rice)
  • 8 oz. sliced button mushrooms (washed)
  • 10.5 oz. cream of mushroom soup
  • ½ cup milk (any kind)
  • ½ cup sour cream
  • 2 cups cheddar cheese (divided)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large pot, brown the ground beef with salt, pepper, and Italian seasoning over medium-high heat. Drain excess grease.
  3. Sauté diced onions in the same pot until softened, then add minced garlic.
  4. Stir in beef broth and uncooked rice, bringing to a boil before reducing to simmer for about 10 minutes.
  5. Add sliced mushrooms on top without stirring; cover and cook for another 5–10 minutes until rice is tender.
  6. Allow resting covered for 10 minutes, then fold in cooked beef, cream of mushroom soup, milk, sour cream, and half of the cheddar cheese.
  7. Transfer mixture to a greased casserole dish, top with remaining cheese, and bake covered for about 20 minutes until heated through.
