- 1.5 teaspoons Italian seasoning
- Salt/Pepper
- 3 Tablespoons butter (divided)
- ¾ cup onions (diced)
- 1 Tablespoon garlic (minced)
- 2 ½ cups beef broth
- 1 ¼ cups uncooked white long grain rice (not instant rice)
- 8 oz. sliced button mushrooms (washed)
- 10.5 oz. cream of mushroom soup
- ½ cup milk (any kind)
- ½ cup sour cream
- 2 cups cheddar cheese (divided)
Instructions
- Preheat your oven to 350°F.
- In a large pot, brown the ground beef with salt, pepper, and Italian seasoning over medium-high heat. Drain excess grease.
- Sauté diced onions in the same pot until softened, then add minced garlic.
- Stir in beef broth and uncooked rice, bringing to a boil before reducing to simmer for about 10 minutes.
- Add sliced mushrooms on top without stirring; cover and cook for another 5–10 minutes until rice is tender.
- Allow resting covered for 10 minutes, then fold in cooked beef, cream of mushroom soup, milk, sour cream, and half of the cheddar cheese.
- Transfer mixture to a greased casserole dish, top with remaining cheese, and bake covered for about 20 minutes until heated through.
