  • 1 1/2 cups chicken stock
  • 2 tablespoons butter
  • 10.5 ounces cream of mushroom soup
  • 1 cup milk
  • 8 ounces sour cream (or Greek yogurt)
  • 1 teaspoon poultry seasoning
  • 3 cups shredded rotisserie chicken
  • 2 cups chopped broccoli florets
  • 1 1/2 cups shredded Colby/Jack cheese

Instructions

  1. Preheat your oven to 375°F and spray a baking dish with cooking spray.
  2. In a medium saucepan, bring chicken stock and butter to a boil. Turn off heat, stir in stuffing mix, cover, and let sit for 5 minutes.
  3. In a large bowl, whisk together cream of mushroom soup, milk, sour cream, and poultry seasoning until smooth. Fold in shredded chicken, broccoli, and cheese until combined.
  4. Pour the mixture into the prepared baking dish and evenly spread the stuffing on top.
