  • 1 cup all-purpose flour
  • 1/4 cup water (plus 1 teaspoon water)

  • oil (for pan-frying)
  • 8 oz (230g) ground chicken thighs
  • 8 oz (230g) Napa cabbage (finely sliced)
  • 1 teaspoon ginger (grated)
  • 1 tablespoon scallion (chopped)
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • 3 dashes ground white pepper
  • 1 pinch salt

Instructions

  1. If making homemade wrappers, combine all-purpose flour and water; knead until smooth and let rest for 30 minutes.
  2. Roll out the dough into small circles about 4 inches in diameter.
  3. In a bowl, mix ground chicken, finely sliced Napa cabbage, grated ginger, chopped scallions, soy sauce, sesame oil, white pepper, and salt until well combined.
  4. Place 1 teaspoon of filling in the center of each wrapper; moisten edges with water and seal tightly.
  5. Boil dumplings until floating; then pan-fry in oil until golden brown on both sides.
