  • 1 medium white onion, peeled and diced
  • 1 large red bell pepper, cored and diced
  • 1 (4 ounce) can diced green chiles
  • 2 (15 ounce) cans beans, rinsed and drained (1 can pinto, 1 can black beans)
  • 1 (8 ounce) can whole kernel corn, drained
  • 3 cups (about 1.5 pounds) shredded or diced cooked chicken
  • 3 cups red enchilada sauce, divided
  • 12 corn tortillas, halved
  • 3 cups shredded Monterrey Jack or Mexican blend cheese

Instructions

  1. Preheat the oven to 375°F and spray a 9×13-inch baking dish with cooking spray.
  2. In a large sauté pan over medium-high heat, heat olive oil. Sauté diced onion and bell pepper for 6–7 minutes until softened. Add green chiles, rinsed beans, drained corn, shredded chicken, and 2 cups of enchilada sauce; mix well.
  3. In the prepared baking dish, spread 1/2 cup of enchilada sauce on the bottom. Layer half of the tortilla halves over the sauce followed by one-third of the chicken mixture and one-third of the cheese. Repeat layers twice more.
  4. Top with remaining tortillas, chicken mixture, remaining enchilada sauce, and final cheese layer.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake uncovered for an additional 10 minutes until cheese is melted.
  6. Let cool slightly before serving topped with fresh toppings like cilantro or avocado.
