- 9 lasagna noodles
- 4 cups shredded rotisserie chicken
- 1 Tbsp olive oil
- 1 medium onion
- 3 garlic cloves
- 5 oz fresh spinach
- 2 tsp sea salt
- 1/2 tsp black pepper
- 4 Tbsp unsalted butter
- 1/3 cup all-purpose flour
- 2 1/2 cups chicken broth
- 1 1/2 cups half and half
- 15 oz ricotta cheese
- 1 large egg
- 1/4 cup parsley
- 1/4 cup parmesan cheese
- 3 cups mozzarella cheese
Instructions
- Cook lasagna noodles until al dente.
- For the white sauce: Melt butter in a large pot, whisk in flour, then gradually add chicken broth and half-and-half; cook until thickened.
- In another pan, sauté onion and garlic in olive oil; add spinach and cooked chicken until heated through.
- Combine ricotta cheese with egg and parsley in a bowl.
- Assemble lasagna by layering white sauce, noodles, chicken mixture, ricotta mixture, and mozzarella; repeat layers and finish with sauce and mozzarella on top.
