  • 4 cups sweet potato cubes

  • 1 cup chicken stock
  • 1 tablespoon lime zest
  • 1 can black beans (drained)
  • Shredded cheddar cheese
  • Cilantro leaves
  • Lime wedges
  • Greek yogurt
  • Avocado
  • Tortilla chips

Instructions

  1. In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add chicken cubes and cook until no longer pink (8-10 minutes). Remove and set aside.
  2. In the same skillet, add sweet potatoes, bell peppers, red onion, chili powder, cumin, salt, chicken stock, and lime zest. Stir to combine.
  3. Cover and simmer for 15-20 minutes until sweet potatoes are tender.
  4. Add black beans and cooked chicken back to the skillet. Heat through for an additional 2 minutes.
