  • 1 lb flank steak (or skirt steak)
  • 1 head broccoli, cut into bite-sized florets
  • 1/2 cup chicken stock
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • 3 garlic cloves, minced
  • 2 teaspoons ginger, minced
  • 1 tablespoon peanut oil
  • 1 tablespoon cornstarch
  • 2 tablespoons dry apple juice

Instructions

  1. Slice the beef thinly against the grain. Combine with soy sauce, peanut oil, and cornstarch in a bowl; marinate for 10 minutes.
  2. Mix together chicken stock, dry apple juice, soy sauces, brown sugar, and cornstarch in another bowl.
  3. Steam broccoli in a skillet with water until just tender; remove and wipe the pan dry.
  4. Heat oil in the skillet and cook marinated beef until lightly charred but still pink inside. Add garlic and ginger; stir briefly.
  5. Return broccoli to the pan, add sauce mixture, and cook while stirring until thickened. Serve hot.
