  • 3 Tbsp cornstarch
  • 1 Tbsp soy sauce (or gluten-free tamari)
  • 1 egg white
  • 1/2 cup all-purpose flour (or a gluten-free blend)
  • 1/2 cup cornstarch
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup orange juice (from 2 medium oranges)
  • 1 Tbsp orange zest (from 1 orange)
  • 2 Tbsp soy sauce
  • 1 Tbsp cornstarch
  • 1/4 cup sugar (or an alternative like erythritol)
  • 2 Tbsp white vinegar (or white grape juice vinegar/rice vinegar)
  • 1/2 Tbsp sesame oil
  • 1/4 tsp chili flakes
  • 8 cups vegetable oil (for frying)
  • 1/2 Tbsp vegetable oil (for pan-frying)
  • 2 cloves garlic (minced)
  • 0.2 oz ginger (minced)

Instructions

  1. Cut chicken into bite-sized pieces. In a bowl, mix cornstarch, soy sauce, egg white, flour, additional cornstarch, salt, and baking powder until smooth. Coat chicken pieces thoroughly.
  2. Heat vegetable oil in a frying pan to about 350°F (175°C). Fry coated chicken in batches for 5-7 minutes or until golden brown; drain on paper towels.
  3. In another bowl, combine orange juice, zest, soy sauce, cornstarch, sugar, vinegar, sesame oil, chili flakes, garlic, and ginger; mix well.
  4. Pour the sauce into the same frying pan over medium heat and stir until thickened. Add fried chicken pieces and toss to coat evenly.
  5. Serve over steamed rice or with your favorite sides.
