  • 28 ounces crushed pineapple + juice
  • ½ cup chicken stock
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons soy sauce
  • 4 tablespoons brown sugar
  • 2 lbs boneless skinless chicken breasts (cut into small chunks)
  • 1 cup cornstarch (for coating)
  • Peanut oil (for frying)
  • ½ tsp ginger
  • 2 tbsp minced garlic
  • ½ tsp red chili flakes (optional)
  • 2 tbsp water

Instructions

  1. In a medium bowl, whisk together crushed pineapple, chicken stock, apple cider vinegar, soy sauce, brown sugar, ginger, garlic, red chili flakes (if using), cornstarch, and water until well combined.
  2. Toss chicken chunks with peanut oil, sea salt, and pepper in a large bowl until evenly coated.
  3. Place cornstarch in a zip-top bag; add chicken pieces and shake until fully coated.
  4. Heat peanut oil in a wok or skillet to 350°F. Fry chicken in batches for about 5-7 minutes until golden brown and crispy. Drain on paper towels.
  5. Transfer hot oil to a measuring cup; simmer the prepared sauce mixture in a saucepan until thickened.
  6. Add fried chicken to the sauce, toss to coat, and serve over rice or vegetables.
