  • 1 1/4 pounds flank steak
  • 1/3 cup olive oil
  • 1 lime (zested and juiced)
  • 1 tablespoon minced garlic
  • 1/2 cup minced cilantro
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 can black beans (drained and rinsed)
  • 1 cup corn
  • 1 avocado
  • 1/2 red onion (sliced)
  • 1 cup cherry tomatoes (halved)
  • Cilantro lime crema

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, lime zest, minced garlic, cilantro, salt, and black pepper in a mixing bowl.
  2. Marinate the flank steak in the mixture for at least 1 hour in the refrigerator.
  3. Heat a cast iron skillet over medium-high heat and cook the marinated steak for about 3-4 minutes on each side until it reaches an internal temperature of 145°F.
  4. Allow the steak to rest for 10 minutes before slicing into strips.
  5. Assemble the bowls starting with rice as the base, then layer black beans, corn, avocado, sliced onion, cherry tomatoes, and top with sliced steak and cilantro lime crema.
