- 4 cups + 3 tablespoons bread flour
- 3 ½ teaspoons Diamond Crystal Kosher Salt
- ¼ cup granulated sugar
- 1 tablespoon all-purpose flour
- 2 teaspoons ground cinnamon
Instructions
- Feed your sourdough starter 6–12 hours before starting to ensure it’s active.
- In a large mixing bowl, whisk together warm water and the active starter. Gradually add bread flour and salt, mixing until a rough dough forms. Cover and let rest for 20 minutes.
- Perform stretch-and-folds on the dough every 20 minutes for about an hour.
- Allow the dough to rise in a covered bowl at room temperature until doubled in size (4-12 hours).
- Prepare the cinnamon sugar mixture by combining sugar, flour, and cinnamon in a small bowl.
- Shape the dough by rolling it into a rectangle, sprinkling with cinnamon sugar, folding it over, and rounding it into a ball.
- Place seam-side up in a dusted proofing basket and refrigerate overnight (12–16 hours).
- Preheat your Dutch oven to 450°F the next day for at least 30 minutes.
- Bake the dough with steam created by dropping ice cubes inside the pot; cover for 40 minutes then uncover and bake for an additional 5-10 minutes until golden brown.
- Allow cooling on a wire rack before slicing.
