Ingredients

  • 1 lb skinless chicken
  • 1 and 1/2 tbsp vegetable oil
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tomato
  • 1 can unsweetened coconut milk
  • 1/4 cup unsweetened shredded coconut
  • 1 tsp ground paprika
  • 1 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp achiote/annatto powder (optional)
  • Salt and pepper (to taste)
  • 2 bay leaves (dried or fresh)

Instructions

  1. Heat oil in a skillet over medium heat. Season chicken with spices including paprika, cumin, coriander, achiote, salt, and pepper.
  2. Cook chicken until golden brown on both sides (5-6 minutes per side). Remove and set aside.
  3. In the same skillet, sauté minced onion, garlic, and tomato until softened. Stir in tomato sauce and shredded coconut.
  4. Pour in coconut milk and return the chicken to the skillet. Add bay leaves and simmer for 10-15 minutes until the sauce thickens.
