  • 2 tablespoons olive oil
  • 2 large chicken breasts (sliced into 4 cutlets)
  • 1/2 yellow onion (diced)
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup chicken broth
  • 1.5 cups canned full-fat coconut cream
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a cast iron skillet over medium-high heat.
  2. Season chicken cutlets with salt and pepper; cook for about 4 minutes per side until browned. Remove from skillet.
  3. Sauté onion, garlic, and ginger in the same skillet until onions are browned (about 10 minutes).
  4. Deglaze skillet with chicken broth, scraping up any browned bits.
  5. Add coconut cream, lime juice, and seasoning; stir well and simmer for about 10 minutes.
  6. Return chicken to the skillet; cover and cook for another 5 minutes until fully cooked.
  7. Serve garnished with cilantro.
