  • 12 oz linguine pasta
  • 6 boneless, skinless chicken thighs
  • 1 large shallot
  • 1 cup sliced bell peppers
  • 4 cloves garlic
  • ½ cup cream
  • Fresh parsley
  • Parmesan cheese
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, finely minced
  • 1 tbsp chopped parsley
  • 1 tbsp chopped chives
  • 2 tsp fresh thyme leaves
  • 1 tsp sweet paprika
  • 1 tsp salt
  • Pinch red pepper flakes
  • ½ lemon juice and zest
  • 2 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tbsp olive oil, or as needed

Instructions

  1. Combine cowboy butter ingredients in a mixing bowl until well mixed; set aside.
  2. Cook the linguine in salted boiling water according to package instructions; reserve some pasta water before draining.
  3. Cut chicken into strips and season with paprika, garlic powder, salt, and pepper.
  4. In a skillet, heat olive oil over medium-high heat and sear the chicken until browned.
  5. Add shallots, garlic, and bell peppers; cook until chicken is fully cooked and vegetables soften.
  6. Stir in cowboy butter and drained linguine; toss to coat.
  7. Add cream, Parmesan cheese, and parsley; stir well to combine.
  8. Serve immediately with lemon wedges if desired.
