  • 4 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli)
  • 6 tablespoons softened butter
  • 3 cloves minced garlic
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh chives
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened butter, garlic, parsley, chives, thyme, chili flakes, smoked paprika, salt, black pepper, and lemon zest until well blended.
  3. In a large bowl, toss the mixed vegetables with the cowboy butter mixture until evenly coated.
  4. Spread the coated vegetables in a single layer on the prepared baking sheet and roast for 25 to 30 minutes. Stir halfway through cooking.
  5. Once golden and tender, remove from the oven and drizzle with fresh lemon juice before serving.
