Ingredients

  • 2 cans (15.25 ounces each) whole kernel corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • ½ cup mayonnaise
  • 4 ounces cream cheese, softened
  • 1 cup mild cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 large jalapeño, seeded and finely diced
  • 1 medium red onion, finely diced (about ½ cup)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • green onion, chopped for garnish

Instructions

  1. In a large mixing bowl, combine the drained corn, rinsed black beans, mayonnaise, softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, grated parmesan cheese, diced jalapeños, finely diced onion, kosher salt, and black pepper.
  2. Stir until all ingredients are well combined and evenly mixed.
  3. Garnish with chopped green onions before serving.
  4. Serve immediately with tortilla chips or crackers.
