Ingredients

Scale
  • 2 tablespoons butter (or olive oil)
  • 1 brown shallot (chopped)
  • 4 cloves garlic (minced)
  • 1 pound uncooked potato gnocchi
  • 1/2 cup sun-dried tomato strips
  • 1/2 cup chicken broth
  • 1 1/4 cups heavy cream
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 1/2 cups fresh baby spinach
  • 1/2 cup grated parmesan cheese
  • Fresh chopped basil (for garnish)

Instructions

  1. Heat butter or olive oil in a large skillet over medium-high heat. Sauté chopped shallots for about 2 minutes until transparent. Add minced garlic and cook for an additional 30 seconds.
  2. Add the uncooked gnocchi and sear for one minute. Stir in sun-dried tomatoes and their oil; cook for another minute.
  3. Pour in chicken broth and heavy cream, scraping any browned bits from the pan.
  4. Season with salt and pepper; cover and simmer on medium heat for about five minutes.
  5. Stir in fresh spinach until wilted, then mix in grated parmesan cheese and chopped basil.
  6. Simmer for another minute until the gnocchi is soft and the sauce has thickened. Taste and adjust seasoning if necessary.
  7. Serve immediately.
