Ingredients

  • 1 pound ground beef (or turkey)
  • 1 tablespoon olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (10 oz) Rotel or any spicy diced tomatoes
  • 4 cups beef broth or chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons cream cheese (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large soup pot over medium heat, add olive oil if necessary. Place ground beef into the pot. Cook until browned while breaking it apart with your spoon. If there’s excess fat after cooking, drain it off.
  2. Add diced onion and minced garlic into the pot. Cook them together for about 3–4 minutes until they become fragrant and translucent.
  3. Stir in the diced potatoes along with chili powder, smoked paprika, cumin, salt, and black pepper. Mix everything well to combine flavors.
  4. Pour in the beef broth (or chicken broth), diced tomatoes with green chilies, Rotel tomatoes, corn, black beans, and pinto beans. Stir everything thoroughly before bringing it to a boil. Once boiling, reduce the heat to let it simmer for about 20 minutes.
  5. Check if the potatoes are tender. Lower the heat again before adding heavy cream (or half-and-half), shredded cheddar cheese, and cream cheese if using. Stir until everything is melted together smoothly.
  6. Taste your soup! Adjust seasoning as needed by adding more salt or spices according to your preference.
  7. Serve hot in bowls garnished with fresh cilantro or parsley.
