  • 2 tablespoons butter
  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)

  • 1 cup uncooked orzo pasta
  • 2 cups chicken or vegetable broth
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups (packed) fresh baby spinach
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil and butter in a large pot over medium-high heat. Sauté chopped onion for 3-4 minutes until translucent.
  2. Add minced garlic and Italian seasoning; cook for 1-2 minutes until fragrant.
  3. Stir in uncooked orzo; toast for 2-3 minutes while stirring frequently.
  4. Pour in chicken broth and heavy cream; bring to a gentle bubble and cook uncovered for about 10 minutes, stirring often until most liquid is absorbed.
  5. Remove from heat, stir in Parmesan cheese and fresh spinach, cover for 3-5 minutes to thicken.
