  • 12 oz Rigatoni Pasta
  • 1 lb Chicken Sausage or Beef Sausage
  • 1/2 Cup Sun-Dried Tomatoes
  • 4 Cups Chicken Broth
  • 1 Cup Heavy Cream
  • 2 Cups Fresh Spinach
  • Freshly Grated Parmesan Cheese
  • 1 tbsp Olive Oil
  • 1/4 Cup Diced Red Onions
  • 67 Garlic Cloves, minced
  • 1 tbsp Tomato Paste
  • 1 Cup Marinara Sauce
  • 1/41/2 tsp Red Pepper Flakes
  • 1/2 tsp Italian Seasoning
  • Salt and Pepper to taste

Instructions

  1. In a large pot or Dutch Oven, heat olive oil over medium heat. Brown the chicken sausage until fully cooked, then remove and set aside.
  2. Lower the heat and add reserved oil from sun-dried tomatoes, diced onions, and minced garlic. Sauté for about 3 minutes until fragrant.
  3. Stir in the tomato paste and cook for an additional 3 minutes.
  4. Add chicken broth, marinara sauce, and rigatoni—make sure the pasta is submerged. Bring to a light boil, then reduce heat and cover; cook for about 15 minutes until al dente.
  5. Stir in heavy cream and chopped spinach; cook for another 3 minutes until spinach wilts.
  6. Turn off the heat and mix in freshly grated Parmesan cheese; return the sausage to the pot and adjust seasoning.
