  • Pasta (150g fresh or 100g dried per person)
  • 2 whole heads garlic
  • 2 tbsp olive oil
  • 30 g butter (cubed)
  • 1/2 tsp pepper
  • 1 cup cream
  • 23 tbsp freshly squeezed lemon juice
  • Zest of a lemon
  • 50 g parmesan cheese (finely grated)

Instructions

  1. Preheat your oven to 200°C (400°F) for roasting garlic.
  2. Prepare the garlic by removing the outer layers and cutting off the tops.
  3. Drizzle olive oil over each bulb, wrap in aluminum foil, and roast for about 45 minutes until soft.
  4. Cool slightly, then squeeze out the garlic into a bowl and mash into a smooth paste.
  5. Cook pasta in salted boiling water until al dente; reserve some pasta water before draining.
  6. Melt butter in a frying pan over medium heat, add pepper, then stir in the garlic paste.
  7. Gradually whisk in cream, followed by lemon juice and zest.
  8. Incorporate parmesan cheese until melted; let simmer until thickened.
  9. Mix cooked pasta into the sauce with reserved pasta water until desired consistency is reached.
  10. Garnish with extra lemon zest and optional paprika flakes before serving.
