Ingredients
- Pasta (150g fresh or 100g dried per person)
- 2 whole heads garlic
- 2 tbsp olive oil
- 30 g butter (cubed)
- 1/2 tsp pepper
- 1 cup cream
- 2 – 3 tbsp freshly squeezed lemon juice
- Zest of a lemon
- 50 g parmesan cheese (finely grated)
Instructions

- Prepare the garlic by removing the outer layers and cutting off the tops.
- Drizzle olive oil over each bulb, wrap in aluminum foil, and roast for about 45 minutes until soft.
- Cool slightly, then squeeze out the garlic into a bowl and mash into a smooth paste.
- Cook pasta in salted boiling water until al dente; reserve some pasta water before draining.
- Melt butter in a frying pan over medium heat, add pepper, then stir in the garlic paste.
- Gradually whisk in cream, followed by lemon juice and zest.
- Incorporate parmesan cheese until melted; let simmer until thickened.
- Mix cooked pasta into the sauce with reserved pasta water until desired consistency is reached.
- Garnish with extra lemon zest and optional paprika flakes before serving.
