- 1/4 cup sun-dried tomatoes

- 1 teaspoon Dijon mustard
- 1 cup uncooked orzo pasta
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 2 cups fresh baby spinach
- 1/4 cup fresh basil (torn)
- Salt & pepper (to taste)
Instructions
- Heat olive oil and butter in a pot over medium-high heat. Sauté chopped onion until translucent, about 3 minutes.
- Add minced garlic, Italian seasoning, sun-dried tomatoes, lemon juice, Dijon mustard, and uncooked orzo. Cook for 2–3 minutes while stirring.
- Pour in chicken or vegetable broth and heavy cream; bring to a gentle boil. Reduce to simmer and cook uncovered for about 10 minutes, stirring frequently.
- Remove from heat; stir in grated Parmesan cheese, baby spinach, and torn basil. Cover to thicken before serving; season with salt and pepper to taste.
