  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup sun-dried tomatoes
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 cup uncooked orzo pasta
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh baby spinach
  • 1/4 cup fresh basil (torn)
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil and butter in a pot over medium-high heat. Sauté chopped onion until translucent, about 3 minutes.
  2. Add minced garlic, Italian seasoning, sun-dried tomatoes, lemon juice, Dijon mustard, and uncooked orzo. Cook for 2–3 minutes while stirring.
  3. Pour in chicken or vegetable broth and heavy cream; bring to a gentle boil. Reduce to simmer and cook uncovered for about 10 minutes, stirring frequently.
  4. Remove from heat; stir in grated Parmesan cheese, baby spinach, and torn basil. Cover to thicken before serving; season with salt and pepper to taste.
