  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) Great Northern beans, rinsed and drained
  • 1 can (15 oz) whole kernel corn, drained
  • 2 cans (4 oz each) diced green chiles
  • 32 oz low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 8 oz cream cheese
  • 1/2 cup heavy cream
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Place chicken in the slow cooker. Top with diced onion, minced garlic, beans, corn, and green chiles.
  2. Pour in the chicken broth and sprinkle with spices. Stir to combine.
  3. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
  4. Shred the chicken using two forks and return it to the slow cooker.
  5. Add cream cheese and heavy cream; stir until melted and smooth.
  6. Finish with fresh lime juice and cilantro before serving hot.
