- Preheat oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until fluffy. Beat in egg and butter vanilla emulsion.
- In another bowl, combine flour, salt, and baking powder; gradually add to the wet mixture until fully mixed.
- Line a baking sheet with parchment paper and scoop tablespoon-sized portions onto it. Bake for about 8 minutes or until edges are golden brown. Let cool.
- For the filling, whisk together instant pudding mix and milk until thickened; fold in whipped topping and chopped bananas.
