  • ¼ cup powdered sugar
  • 1 egg
  • 2 tsp butter vanilla emulsion
  • 2â…“ cups flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • ½ package instant vanilla pudding mix
  • ½ cup milk
  • 4 oz whipped topping (like Cool Whip)
  • 1 medium banana, chopped
  • Nilla wafers for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until fluffy. Beat in egg and butter vanilla emulsion.
  3. In another bowl, combine flour, salt, and baking powder; gradually add to the wet mixture until fully mixed.
  4. Line a baking sheet with parchment paper and scoop tablespoon-sized portions onto it. Bake for about 8 minutes or until edges are golden brown. Let cool.
  5. For the filling, whisk together instant pudding mix and milk until thickened; fold in whipped topping and chopped bananas.
  6. Once cookies are cool, spoon banana cream filling onto each cookie and top with Nilla wafers.
