Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- â…“ cup mayonnaise
- â…“ cup sour cream
- Juice and zest of 1 large lime
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- ¼ teaspoon kosher salt
Instructions
- In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Mix until smooth and set aside.
- Boil water in a large pot and cook shrimp for 2-3 minutes until pink.
- Prepare an ice bath; transfer cooked shrimp to cool for about 3 minutes then drain.
- Chop cooled shrimp into bite-sized pieces.
- In the mixing bowl with the dressing, add chopped shrimp, diced cucumber, and green onions. Mix gently until well combined.
- Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
