  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Mix until smooth and set aside.
  2. Boil water in a large pot and cook shrimp for 2-3 minutes until pink.
  3. Prepare an ice bath; transfer cooked shrimp to cool for about 3 minutes then drain.
  4. Chop cooled shrimp into bite-sized pieces.
  5. In the mixing bowl with the dressing, add chopped shrimp, diced cucumber, and green onions. Mix gently until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
