  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, and salt in a bowl. Set aside.
  2. Bring water to boil in a pot and cook shrimp for 2 to 3 minutes until pink. Remove shrimp using a skimmer and place them in an ice water bath for about 3 minutes to stop cooking.
  3. Drain the shrimp and chop into bite-sized pieces.
  4. In a mixing bowl, combine chopped shrimp, diced cucumber, sliced green onion, and dressing. Stir gently until all ingredients are coated.
