  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup full-fat canned coconut milk
  • 1/2 cup sun-dried tomatoes, chopped
  • 10 oz gluten-free pasta of your choice
  • Fresh basil for garnish

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken for about 5 minutes on each side until browned. Remove from skillet.
  2. In the same skillet, sauté chopped onion until translucent (about 3 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  3. Pour in chicken broth and bring to a simmer. Add coconut milk, sun-dried tomatoes, oregano, and red pepper flakes; stir to combine.
  4. Bring sauce back to a gentle simmer, then add cooked gluten-free pasta and toss until well-coated.
  5. Slice cooked chicken into strips and serve on top of pasta garnished with fresh basil.
