  • 125 g butter (chopped)
  • 150 g caster sugar
  • 100 g light brown sugar
  • 2 medium to large eggs
  • 3 tablespoons cocoa powder
  • 130 g plain flour
  • 1 teaspoon baking powder
  • Sea salt for sprinkling (optional)

Instructions

  1. Preheat your oven to 160ºC (320ºF) for fan setting or 170ºC (338ºF) for conventional.
  2. In a heatproof bowl over simmering water, melt dark chocolate and butter together until smooth.
  3. In a separate bowl, whisk together eggs and sugars until thick and fluffy.
  4. Combine melted chocolate mixture with egg-sugar mix; whisk until fully blended.
  5. Gently fold in sifted dry ingredients until just combined.
  6. Scoop dough onto a lined baking tray, leaving space between each scoop. Sprinkle with sea salt if desired.
  7. Bake for about 12 minutes until edges are firm but centers remain soft.
  8. Let cool on the tray for 10 minutes before transferring to a cooling rack.
